Awhile ago, I was in a lunchtime rut. We were eating the same two meals over and over and over again: either a cheese, cracker, and fruit plate or a peanut butter and jelly sandwich. Lather, rinse, repeat. Occasionally, there would be a day that we just reheated some of the night before's dinner, but that was not a regular occurrence because Hubs generally takes any leftovers to work with him for lunch. I was bored. The kids were bored, and I am not at all creative when it comes to this sort of thing. What is a mom to do?
One day while perusing the aisles in the children's section of the library while the kids were working on some puzzles, I came across
this cookbook that is full of recipes that are not only healthy for children, but are set up to easily include them in the preparation of their own food.
My children LOVE to help in the kitchen, so I thought I would check it out and give it a whirl. That was well over a year ago, and we
still use some of those recipes consistently. One of which, I am going to share with you today because not only did contribute to lifting us out or our lunch rut, but it is YUMMY, nutritious, portable, and great for meal or snack. PLUS, as an added bonus, it takes all of two minutes to make! They are called
Honey Nutty Rollers.

| You start with whole wheat soft tortillas |
 |
| Spread peanut butter over them (you can use smooth, creamy, natural, etc.) |
 |
| Drizzle with honey |
 |
| Sprinkle with raisins |
 |
| Roll up and voila! |
Instant kid-pleaser! We eat these at least twice a week and we also take them along when we pack lunch for playdates or longish car trips, etc. Simple, satisfying, and EASY! My kind of meal. :)
I'm definitely going to give those a try! We are actually in a lunch rut ourselves.
